Garlic Lovers' Pasta

Method

  • Put the garlic, chilli and olive oil in a frying pan (the olive oil should be cold - you don't want it to brown). Heat very gently for a few minutes. Add the chopped bacon and plenty of freshly ground black pepper. Allow to fry for a few minutes, strirring regularly.

  • Cook pasta as per packet instructions.

  • Mix together to coat the pasta in the oil and serve.

  • Tips

    • Even better if you add prawns (king or little) once the bacon is cooked.

      Lovely with toasted ciabatta to soak up any excess olive oil and garlic

    • 6 cloves garlic- peeled and finely chopped
    • 4 rashers bacon. chopped (smoked)
    • ½ Red Chilli. deseeded and finely sliced
    • 4 tbsp olive oil
    •  Black pepper
    • 200g Pasta ( any type )
