Crumbly Cookies with Jammy Filling

Method

  • Preheat the oven to 180c, gas mark 4. Line 2 large baking tins trays with greaseproof paper.

  • Place the butter and sugar in a mixing bowl with an electric whisk or a wooden spoon until pale and fluffy

  • Add the vanilla extract and continue beating. Using a metal spoon fold in the flour and baking powder
  • until the mixture forms a dough

  • If you are making chocolate chip ones, add the chips now.

  • Take a small piece of dough and roll in your hands to make a ball, Place on the baking tray then repeat with all the mixture. Leave a gap as the mixture will spread when cooking.

  • Make an imprint in to each ball with your finger deep enough to hold a little jam. Fill each cookie with ½ tsp of jam, don’t over fill!

  • Place in the oven for 15 – 20 mins until lightly golden brown. Transfer on to a cooling rack to cool and then EAT!

  • Tips

    • You could try other fillings for the cookies, such as lemon curd or even giant chocolate buttons. The cookies will keep in an airtight tin for up to 3 days

    • 275g Plain Flour (sieved)
    • ½ tsp Baking Powder (sieved)
    • 8 tsp Jam or Chocolate Chips
