Method

  • fry carrots and onion with the fry light in a pan for about 4 mins.

  • Add the ground corriander and cook for a further 1 min.

  • Add 2 pints of stock and bring to the boil

  • simmer untill carrots are cooked through

  • Blend

  • Return to a clean pan and re heat adding the chopped corriander and salt and pepper

    • Love this recipe. Just as a tip Weight watchers have a double cream which you can buy in Sainsburys so if you like your soup extra creamy like me stir in a spoonful for one point.

    Ingredients

    • 450g fresh sliced carrots
    • 1 sliced onion
    • 2 pints veg stock
    • 1tsp ground corriander
    • to taste fresh chopped corriander
    • to taste salt and pepper
    • 2-3 sprays fry light for frying
