Finely chop a large red onion, garlic, and coriander. Crush the peanuts (can be done by pounding a knife handle on the closed pack of nuts).
Choose the main ingredient. We have done this with chicken, quorn, salmon and shrimps (Salmon and shrimp pictured). They are all as good as one another as they contribute minimally to the flavour.
Heat the sesame oil in a wok or large non-stick pan. Add the onion and garlic till just browning. Then add everything else - meat/fish/quorn, soy sauce, lime juice, chilli, peanuts and give a good mix in what should be a hot pan. Season with salt and pepper. Once your core ingredient is cooked, transfer straight to the table on to a heat proof mat with everyone sat ready to eat.
To serve, everyone takes a lettuce leaf, takes a spoonful from the wok, drizzle some sweet-chilli sauce over it then wrap and eat.
