Sausage and Potato Curry

Method

  • Brown sausages and then set aside.

  • Saute onions in same pan and then add the spices and mustard.

  • Pour in brandy, let cook for a minute.

  • Then pour in stock and cream.

  • Add sausages back in along with the potato slices.

  • Cover pan and slowely cook for about an hour or until the potatoes are cooked. Careful the cream doesn't split, you could add the cream in nearer the end if you prefer.

    • Nice! I guess you could do the same with pork chops say for something quite exotic and yet classy?

    Ingredients

    • 12 sausages of your choice
    • 1 Onion. sliced
    • ½ tsp cumin powder
    • ½ tsp Coriander powder
    • ½ tsp cinnamon powder
    • 1 tbls Dijon mustard
    • 2 tbls brandy
    • 150 ml beef stock
    • 100 ml double cream
    • about 3 potatoes-thickly sliced
    •  salt and pepper to taste
    • ¼ tsp chilli flakes (optional)

    Something a bit more interesting than bangers and mash. Make it as spicy as you like.
