Method

  • Sift Dry ingredients together THREE times. Beat eggs and then add sugar until thick and creamy. Add vanilla. Fold in the dry ingredients slowly, meanwhile have the milk and butter in a pot in the boil. When the dry ingredients are all folded in, and the milk and butter has frothed up, quickly pour in frothing milk mixture into cake mixture and mix well. Pour into 2 greased large tins and bake in the oven (400 degrees or gas mark 6) for 15 - 20 mins. When cold ice with Carol's butter icing

    • yes this is quantities for a large 12" cake tin - but we usually make 2 and if you want to make a smaller cake use 3 eggs and adjust the quantities accordingly!

    • I am going to make my son a T-REX bday cake and have a template - a 9" tin is what they suggest, but I prefer your recipe - are the amounts enough to make that size cake?

    • You can make this cake in advance but if you are going to do it more than 1 or 2 days in advance i tend to wrap it in cling film and freeze the cake - bring it out and defrost day of use

    • Got to tell you I've made this cake too and it really is fab. My kids and their friends all love it because it is so light and fluffy and when you put strawberries and cream in the middle it is unbeatable!!!
