Method

  • 1. Turn on the oven to 175oC/350oF/Gas mark 4
  • 2. Grease the loaf tin with lots of butter making sure that you reach the corners
  • 3. Put all the ingredients, except the bananas, into the food processor or bowl and mix them
  • 4. Add the bananas and miz everything again
  • 5. Put the mixture into the loaf tin and put it on the middle shelf of the oven
  • 6. After 45 mins take it out of the oven. It should be golden brown and risen with a slight crack across the top.
  • 7. Push a skewer into the middle. If it's cooked the skewer will come out clean if not pop it back in the oven for another 10 mins.
  • 8. Let it cool in the tin for a few mins before tipping it out onto a cooling rack.

    • ooooo really good recipe! Its really easy because you can put it all in a bowl (i did the mixing by hand, which i think will have made it lighter, but i dont have a food processor so i had no choice!). I added an extra banana because i had 4 really ripe ones and no one was gonna eat the one left, which meant that it needed a bit longer in the oven. It still turned out great and was really moist. I also added crushed and lightly chopped hazel nuts (because i didn't have walnuts and i prefer hazel nuts) and sprinkled a few on the top and that made it look great and added an extra dimension to the flavour. I would also say that the salt is really important, but if using table salt remember not to use as much (i used rock salt, which i ground up in a pestle and mortar). Great recipe thanks girls!

    • 50g soft butter and some extra for greasing a loaf tin
    • 120g caster sugar
    • ½ a teaspoon salt
    • 1 large egg
    • 360g self raising flour
    • 125ml milk
    • 3 bananaas peeled and chopped
    • ANYTHING EXTRA
    • Try adding a tbsp choped walnuts
    • Or 2 tbsp chocolate chips
    • Or a tsp mixed spice or cinnamon
