Method

  • Trim meat and cut into 2 cm (3/4 inch) cubs.
  • Fry onion over medium heat in half of the oil until golden.Add turmeric and fry for 2 more minutes.
  • Increase heat,add meat cubes and stir fry over high heat until meat changes colour and begins to turn brown,reduce heat.then add the water and leave to simmer.
  • Add the remaining oil to an other pan let it to heat and add all your prepared herbs to it and fry over medium heat until wilted.add to the sauce, then add dired limes or lemon juice,cover and simmer for 1 hour
  • Add your pr-cooked red kidney beans,salt and pepper to season and leave to simmer for further 30 minutes or until your meat is tender.this is an exquisite persian dish which you have to serve it with white rice.

    • 600 grams boneless lamb
    • 1 large onion finely chopped
    • 1/3 cup cooking oil
    • 1 teaspoon turmeric
    • 2 cup water
    • ¼ cup fresh lemon juice
    • 1 cup kidney beans(pre cooked or canned)
    • to taste  salt and pepper
    • 1 cup finley chopped spring onion just the top part
    • 2 cup finley chopped spinach
    • ½ cup finley chopped parsley
    • ¼ cup finley chopped coriander
    • ¼ cup finley chopped garlic chives
    • ¼ cup finley chopped fenugreek or mathi
