Waffle Berry Pudding

Method

  • This recipe I use a lot at my cooking shows with pampered chef. It is very popular and a lovely light dessert after a main course.
  • Thaw frozen raspberries for 2 hours before use or defrost using a microwave.
  • Chop up the waffles into small squares roughly with a Knife. Grate or coursely chop up white chocolate. Into a casserole dish or stoneware deep dish baker layer waffles, sprinkle white chocolate, and layer of raspberries/blueberries. Repeat layers. (Like layering a lasagne)Then in a mixing jug or batter bowl add 2 eggs, vanilla essence and creme fraiche and sugar. Beat together with a whisk until smooth. Pour over waffle layers until well covered. Bake for 30 minutes until golden brown. It is heavenly!

    • SWEET WAFFLES
    • 4 x packets of sweet waffles
    • 1 x large packet of white chocolate
    • 1 x tub of frozen raspberries
    • 500 mls Creme Fraiche
    • 2 X eggs
    • 1 tsp Vanilla essence
    • punnet of blueberries (optional)
    • 1 x good quality vanilla ice-cream
    • 1oz caster sugar
