Method

  • 1. Preheat the oven to 180ÂșC, gas mark 4.

  • 2. Toss the chicken pieces in the seasoned flour.

  • 3. Heat the oil in a pan and brown the chicken pieces on both sides then place them in a casserole dish.

  • 4. Saute the onions and peppers in the same oil.

  • 5. Add the onions, peppers and tomatoes to the casserole dish.

  • 6. Season and add the sugar and stock. Cover and cook for about 1 hour until the chicken is thoroughly done.
  • Ingredients

    • 1 kg Chicken drums and tights
    • 0.5 cup Seasoned flour
    • 5 tbsp. Olive oil
    • 2 Yellow peppers
    • 2 Onions
    • 1 can Chopped tomatoes
    • 1 tsp. Caster sugar
    • 1 tsp. Ground carraway seed
    • 0.25 pint Chicken stock
