Brush one side of tortilla with oil and cook oil side down over griddle or pan.
Place slice of brie, mango, spring onions, some chilli and pepper, place another tortilla on top marked side up.
I usually make and cook these on griddle and turn to heat through, but original recipe suggests, placing them on a baking tray in the oven to heat through. Once heated, cut into 8 wedges.
I served mine as a starter with Guacamole Dip as featured on MYDISH
I make this recipe when we have lots of friends round, it's great for sharing. If there's lots of us, I make nacho's too, and then a big pot of chilli. Yum!
