Brie Quesadillas

Method

  • Heat Oven 200c/180c fan/gas 6.
  • Brush one side of tortilla with oil and cook oil side down over griddle or pan.
  • Place slice of brie, mango, spring onions, some chilli and pepper, place another tortilla on top marked side up.
  • I usually make and cook these on griddle and turn to heat through, but original recipe suggests, placing them on a baking tray in the oven to heat through. Once heated, cut into 8 wedges.
  • I served mine as a starter with Guacamole Dip as featured on MYDISH

    Ingredients

    • 8 soft flour tortillas
    • 350g.12oz Brie
    • 1 mild red chillie deseeded and finely chopped
    • 1 ripe mango. peeled. stoned and finely sliced
    • 2 spring onions. thinly sliced
    •  olive oil for brushing

    I make this recipe when we have lots of friends round, it's great for sharing. If there's lots of us, I make nacho's too, and then a big pot of chilli. Yum!
