Method

  • 1. Boil lentils according to packet directions (which can be from half to 2 hours) until they are soft but not mushy.

  • 2. Add onions, peeled and chopped tomatoes and herbs

  • 3. Boil for a further 10 minutes. Do not strain.

  • 4. Add butter and cheese to melt before serving hot straightaway.

  • Note: Its not a soup that keeps. If I'm in a hurry I use tinned tomatoes ready chopped and peeled and add the grated peel and juice of half an orange.
  • Ingredients

    • 1 lb / 450g lentils
    • 2 quarts / 2.25 litres salted water
    • ½lb / 225g  Peeled and sliced onions
    • 2lbs / 900g  tomatoes
    • 3oz / 75g Butter
    • 1oz / 25g  Grated cheese
    • dash of  thyme and parsley
