Method

  • 1. Make a caramel with 50g of sugar and a little water - when boiled put into a blamanche tin


  • 2. To make the pudding bit...Bring the ½l milk to the boil.

  • 2. Add vanilla, leave to infuse for ten minutes, away from the heat.

  • 3. Mix the eggs, yolks and sugar together in a bowl and whisk.

  • 4. Add 50ml cold milk, then gently add warm milk, whisking constantly.

  • 5. Pour milk mixture, through a seive onto the caramel.

  • 6 Cook in a bain-marie in the oven at 150°c (300°F) for 45 mins.

  • 7. Let set in the refrigerator overnight and serve by turning the creme caramel upside down onto a plate, allowing the caramel to coat it.

    • CARAMEL
    •  water
    • 50g sugar
    • CREME PUDDING BIT
    • ½ litre milk
    •  Vanilla pod
    • 2 eggs
    • 3 egg yolks
    • 125g sugar
