Pick and wash the berries. Boil them with the water and sugar until they are soft, and then rub them through a sieve. Dissolve the gelatine in a little water and stir it into the cranberry puree and leave it to cool. When it is beginning to set, add the prepared apple and celery and nuts. Turn the mixture into wet individual moulds. When the jellies are quite set serve them arranged on a glass dish lined with lettuce leaves. Garnish each jelly with a spoonful of mayonnaise. Serve the jellies with cold turkey or chicken.
