Method

  • Heat up the oil in a deep frying pan.

  • Add the egg and using a spatula or wooden spoon start to move it about as if making scrambled egg. Make sure you keep seperating it so it doesnt become a big lump.

  • Once its cooked add the rice and mix with the egg.

  • Add the peas and sweetcorn, ham and prawns and heat through. Then add a splash of soya sauce and a splash of sweet chilli sauce.

  • Serve warm with a stirfry or chinese curry.
  • Tips

    • Some people may wish to add salt. I leave that out as I dont like it but many people are used to having very salty food.

      A good tip for this recipe which I've done many times before is to not over stir the rice as it becomes stodgy and ends up being very gooey!

    • Really quick and easy and delicious to boot, much healthier than the takeaway version but just as nice and just as quick! I used Gammon instead of the ham and added chicken to bulk it out, just fry it off first... worked really well!

    Ingredients

    • SPECIAL FRIED RICE
    • Enough for 2 rice. cooked 10 minutes and drained
    • 2 eggs. beaten
    • a handful Peas
    • a handful sweetcorn
    • 8 large or 12 small prawns (cooked)
    • 1 tablespoon stir fry oil or sesame oil
    • 2 tablespoons soya sauce
    • 1 table spoon Sweet Chilli Sauce
    • 2 large slices thick cut ham
