Potato Latkes

Method

  • 1. Combine first the 6 ingredients in a small bowl until well-blended.
  • 2. Heat oil in frying pan, and when hot but not smoking, gently place tablespoons of the potato batter into oil.
  • 3. Turn until brown on both sides. Remove from pan.
  • 4. Place on paper towels or absorbent paper on dish.
  • 5. Repeat until all of the batter is used.

  • Serve with sour cream or applesauce.
  • Makes 14 latkes

    • 1 Lb or 450g Potatoes Peeled and Grated
    • 1 Small Onion Peeled and Grated
    • 1 Egg
    • 2½ Tbsp Flour
    • ½ Tsp Salt
    • 1/8 Tsp Black Pepper
    • ¼ Cup Extra Virgin Olive Oil
