Tips
- You dont have to sieve the flour, or fold it in gradually, as it always seems to rise.
If you like you can add the grated zest of an orange to the sponge mix, and 1 teaspoon of orange essence to the icing instead of vanilla.For a firmer icing only use 1 tablespoon of milk.

Ingredients
- SPONGE INGREDIENTS
- 125 gm Butter
- 250 gm caster sugar
- 3 med eggs. beaten
- 225 gm self raising
- 50 gm cocoa powder
- 1 tablespoon lemon juice
- 200 ml milk
- ICING INGREDIENTS
- 125 gm butter
- 250 gm icing sugar
- 5 teaspoons cocoa powder
- 1 teaspoon Vanilla essence
- 2 tablespoons milk
- grated chocolate to decorate

Well, from a shakey start (worried about the sloppy batter,) this cake has turned out perfectly! Will use this recipe from now on. My girls are going to decorate it with Easter eggs later. Just a thought,cakes that didn't rise, when using bicarb get it in the oven pronto, as it starts working as soon as you introduce liquid to it.

This recipe is great I am not a great cook but this was so simple, I have made 3 in one week for birthday presents and everyone loved it I added the orange thankyou

I have been trying to find a good sponge recipe for ages and this is the best so far. Easy to make and tastes good. Only problem was that it did not rise very well...

I used your recipe It's great. Though I used self raising flour. after realising I had no plain flour. didn't use all the choc filling. Had the grandkids begging for more. (greedy toads)
