Microwave Golden Syrup Pudding

Method

  • 1. Cream butter and sugar together. Cradually add the eggs and vanilla essence. Add the flour, milk and lemon zest.
  • 2. Put the syrup in the bottom of a two pint bowl. (Not metal). Spoon the mixture on top. Place in the microwave (with a plate on top). Cook for 3 1/2 minuites on high. Leave to stand for 2 minutes.
  • 3. Serve with custard or ice cream.
  • (NB if doubling the quantities, cook for 5 1/2 minutes on high).
  • Tips

    • If this pudding is not quite done, put back in for 30 seconds at a time. Timings vary depending on the output of your microwave, so find the times which suit yours - can sometimes be a bit of trial and error!

    • We tried this inaugural recipe from this site last night for supper in front of the TV.It did take a couple of minutes more but hot with cornish ice cream and a splash of double cream. Yummy!

    • Hi Debz Glad it worked well and you enjoyed it! Yes, it does depend upon the microwave power - its better to undercook and add a little more time gradually - if you over cook it you will be using it as a tennis ball!

    • really enjoyed this pudding!!!!....it took a few mins more to cook...but that might be my microwave....it tasted just like a steam pudding....with just a fraction of the time and effort....will be making this again :-)
