1. Pre-heat oven to 180C
2. Take the pastry from the fridge about half an hour before you want to use it so slightly softer and easier to roll
3. Take a jar of mincemeat and add a few table spoons of brandy.
4. Sprinkle flour on a work surface and roll out the pastry.
5. Grease the tray and use relevant pastry cutter.
6. Line the tray with the pastry rounds and add mincemeat.
7. Dampen the ends of the rounds of pastry with water and press them slightly to form lids.
8. Brush each one with milk.
9. Bake at the top of he oven for about 20-25 mins until they are light golden brown.
10. Then cool and sprinkle with sifted icing sugar.
11. Store in a airtight container and warm slightly before eating.
12. Serve with cream, brandy sauce/butter or my favourite posh Vanilla Ice Cream.
TIP:
Can use either short crust or puff pastry.
