Put the carcasses and chicken into a large saucepan (shissel).
Cut carrots in half and add
Peel onions and add whole
Wash celery and cut sticks in half
Add enough water to cover
Place on slow burner and bring to boil
When boiling - put lid on saucepan and place in slow oven for 12 hours!!!
Take out of oven - allow to cool
Remove/strain stock
Remove onions and celery and throw away
Keep carrots and put in stock
Put chicken pieces in soup
Put in fridge to cool
Remove from fridge and take off any fat from top
Heat and serve
