Method

  • 1. Preheat the oven to 190°C.

  • 2. Mix the chopped fruit- such as peaches, oranges, apples, pears, mangoes- with the spring onions, tomatoes, olive oil, chutney and chopped coriander.

  • 3. Cubed the roast pork.

  • 4. Pop them onto a baking sheet, top with the fruit salsa, drizzle with olive oil and cook until cooked through and piping hot.

    • Made this for the first time today. My husband and I loved it and the kids (only 2 and 3) had a tentative try. Easy to make. Definitely going to be making this again. A firm favourite.

    Ingredients

    • 500g Ripe fruit. peeled and roughly chopped
    • 4 Spring onions
    • 220g Tomatoes. core removed and finely chopped
    • 2 tbsp. Olive oil
    • 1 tbsp. Chutney
    • 3 tbsp. Coriander
    • 500g Leftover roast pork
    • 0.5 tsp. Black pepper

    great recipe for using up riped any fruits that are past their best and your leftover roast pork. Absolute family favourite.
