Method

  • 1. Saute the onion and bacon on the oil in a frying pan.

  • 2. Transfer the bacon and onions into a large bowl.

  • 3. Add the mashed potato and cooked vegetables, season well. Add the cheese, mix well and divide the mixture into six portions and shape each portion into a cake.

  • 4. Put a little flour on a plate and coat each cake in flour on both sides.

  • 5. Put onto a greased baking tray and brush with a little melted butter. Bake in a preheated oven for 30 minutes.

    Ingredients

    • 1 Onion. finely chopped
    • 4 Rashers streaky bacon. cut into small pieces
    • 500g Leftover mashed potato
    • 350g Leftover mixed cooked vegetables – roast parsnips. green beans. carrots. cauliflower. broccoli or peas. chopped into small pieces
    • 30g Cheese
    • 30g Clover butter
    • 4 tbsp. Plain flour
    • 1 tbsp. Parsley. chopped
    • to taste Salt and pepper

    This is a great leftover recipe that can be made with any vegetable leftovers and mash. Serve with a poached, fried or scrambled egg or grilled fish.
