Finely chop the onions and place with the crumbled Feta in food processor or blender. Mix till smooth and add the saffron, chives, chili flakes and half of the oil.
Season with salt and pepper and pack the mixture into a small bowl or ramekin dishes. Cover with the remaining oil and decorate with the parsley.
Cover with Clingfilm and chill in the fridge.
Serve with crudites, crackers, or toast as an appetizer.
Tips
Try using sweet red onions instead of Spring Onions.
