Method

  • Halve and stone the avocados. Remove some of the flesh and put into a bowl.

  • Place the red onion, chopped walnuts, mayonnaise into the bowl and mix. Season with salt and pepper.

  • Add the shrimps, mix to coat and fill the halved avocados.

  • Sprinkle with paprika or cayenne pepper just before serving.

  • Tips

    • As an alternative take all the flesh out of the avocados and mix with the shrimp mixture before filling each shell.

    • 2 Avocados halved and stoned
    • 4 - 5 Walnuts chopped
    • ½ Red onion. chopped
    • 4 tbsp. Mayonnaise
    • 100 g Shrimps or Prawns
    • 1 tsp. cayenne pepper . paprika or mild chilli powder
