Method

  • Mix the double cream or milk and cornflour together. Put into a saucepan with the sugar and boil for five minutes, stirring all the time. Add the brandy.

    • I always mix the cornflower and sugar in a little milk into a paste then add the boiled milk to thicken. The brandy (or rum) can then be stirred in. What about adding a little butter?

    • 1oz (25g) Sugar
    • 250ml Brandy
