Method

  • Whip the cream, slowly adding the sugar, until stiff.

  • Crush the macaroon biscuits and mix well with the cream.

  • Add a few drops of almond essence and Drambuie (or rum, whisky or brandy) to taste.

  • Divide into 4 glasses and sprinkle with toasted flaked almonds. Chill before serving.

    • 250 ml double cream
    • 25 g castor sugar
    • 50 g small macaroon biscuits
    • 25 g Flaked almonds
