1. Drizzle some oil from the curry paste jar into a wok or large frying pabn, gently heat, then add the onion. Sizzle over a low heat for 4 mkinutes until the onion softens, then stir in the curry paste and cook for a few minutes longer. Stir in the prawns and tomatoes and bring to a gentle boil.
If using raw prawns, simmer until they have turned pink.
2. Season, then adds the coriander just before serving with boiled rice and naan bread.
Tips
Serve this with chopped chilli on the side if you like a chilli kick. You could also stir some grated creamed coconut into the curry at the same time as the curry paste for a Thai flavour.
