Yummy Prawn Curry in A Hurry!

Method

  • 1. Drizzle some oil from the curry paste jar into a wok or large frying pabn, gently heat, then add the onion. Sizzle over a low heat for 4 mkinutes until the onion softens, then stir in the curry paste and cook for a few minutes longer. Stir in the prawns and tomatoes and bring to a gentle boil.
  • If using raw prawns, simmer until they have turned pink.
  • 2. Season, then adds the coriander just before serving with boiled rice and naan bread.
  • Tips

    • Serve this with chopped chilli on the side if you like a chilli kick. You could also stir some grated creamed coconut into the curry at the same time as the curry paste for a Thai flavour.

    • 200g large raw or cooked prawns. defrosted if frozen
    • 400g tin chopped tomatoes with garlic
    • 1 lge Bunch Coriander - chopped
