Filo Topped Fish Fillets

Method

  • 1. Preheat oven to 220oC gas 7. Put the fish onto a non stick baking shet and season all over. Mix the dill and soft cheese in a bowl, stir in the prawns, taking care not to break them. Season with black pepper, then spread evenly over the top of the fish.
  • 2. Brush the filo sheets with the oil then cut into thick strips. Scrunch the pastry up a little and crumple on top of the fish. Scatter with the parmesan then bake for 10 mins or until the fish is cooked through and the pastry is crisp and golden.
  • Tips

    • This has a bit of a wow factor as it looks good, tastes great and is healthy!! Serve with little new potatoes, green beans and lemon wedges.

    Ingredients

    • 4 x 175g thick white fish fillets (haddock. cod etc)
    •  small bunch dill. leaves only. chopped
    • 100g ½-fat soft cheese (philadelphea or shops own)
    • 200g frozen prawns. defrosted or fresh
    • 4 sheets Filo pastry
    • 2 tsp sunflower oil
    • 1 tbsp parmesan cheese. grated

    This is so simple but absolutely yummy! I first did this for a dinner party - very healthy but impressive! I would like to dedicate this to our best man and his wife!
