Fish Parcels with Coriander, Ginger & Coconut

Method

  • 1. Heat the oven to 200oC fan 180oC or gas 6. Whizz the coriander, garlic, lemon jiuce, giner and chillin in a food processor. Scrape into a bowl and add the coconut, cumin and seasoning. Tear off 4 large pieces of foil and put a little butter on each then spoon over 2 tbsp of the cocunut mixture. Top each with a piece of fish and more of the mixture. Dot with butter.
  • 2. Fold up the foil to create sealed parcels and put on a baking sheet in the oven for 20 minutes.
  • Tips

    • Serve with basmati rice or a mixture of wild and basmati and some roasted cherry tomatoes.

    •  large bunch coriander
    • 1 clove garlic
    • 2 lemons. juice only
    • 2 cm fresh ginger root. peeled and finely chopped
    • 1 green chillies - seeded and finely chopped
    • 200g desiccated coconut
    • 1 tsp ground cumin
    • 4 fillets thick white fish
