Method

  • Sieve the flour and salt.

  • Rub the butter into the flour.

  • Add the rest of the ingredients except the additional almonds and sugar.

  • Put into a 7 - 8 inch sponge tine - top with the flaked almonds and cook at 180 degrees for 35 minutes.

  • When cooked, sprinkle with the additional caster sugar.

    • 4 oz self raising flour
    •  salt - pinch
    • 2 oz butter
    • 1 ½ oz caster sugar
    • 1 egg
    • 2 tbsp apricot jam
    •  almond essence
    •  caster sugar
