Method
Sieve the flour and salt.
Rub the butter into the flour.
Add the rest of the ingredients except the additional almonds and sugar.
Put into a 7 - 8 inch sponge tine - top with the flaked almonds and cook at 180 degrees for 35 minutes.
When cooked, sprinkle with the additional caster sugar.

- 4 oz self raising flour
- salt - pinch
- 2 oz butter
- 1 ½ oz caster sugar
- 1 egg
- 2 tbsp apricot jam
- almond essence
