Pineapple Upside Down Pudding

Method

  • Melt the butter and soft brown sugar together.

  • Pour the melted butter and sugar into the bottom of a 2 pint buttered pie dish.

  • Arrange the pineapple rings over the base and sides.

  • Rub the further butter into the flour, add the caster sugar and lemon peel and combine together.

  • Mix to a soft batter with the eggs and milk.

  • Pour on top of the pineapple and bake at 190 degrees for 30 minutes.

  • Reduce the heat to 180 degrees and cook for a further 35-45 minutes.

  • Leave in the dish for 5 minutes, then turn out onto a warmed plate.

  • Serve with cream and/or warmed pineapple syrup.

    • 1 TSP OF SALT
    • 2 oz butter
    • 2 oz soft brown sugar
    • 1 medium can pineapple rings - well drained
    • ½ lb self raising flour
    • ¼ tsp - level salt
    • ¼ lb butter
    • ¼ lb caster sugar
    • 2 eggs - large
    • 4 -5 tbsp cold milk
    • 1 lemon - medium (grated peel only)
