Pineapple Upside Down Pudding
Method
Melt the butter and soft brown sugar together.
Pour the melted butter and sugar into the bottom of a 2 pint buttered pie dish.
Arrange the pineapple rings over the base and sides.
Rub the further butter into the flour, add the caster sugar and lemon peel and combine together.
Mix to a soft batter with the eggs and milk.
Pour on top of the pineapple and bake at 190 degrees for 30 minutes.
Reduce the heat to 180 degrees and cook for a further 35-45 minutes.
Leave in the dish for 5 minutes, then turn out onto a warmed plate.
Serve with cream and/or warmed pineapple syrup.
Ingredients
- 1 TSP OF SALT
- 2 oz butter
- 2 oz soft brown sugar
- 1 medium can pineapple rings - well drained
- ½ lb self raising flour
- ¼ tsp - level salt
- ¼ lb butter
- ¼ lb caster sugar
- 2 eggs - large
- 4 -5 tbsp cold milk
- 1 lemon - medium (grated peel only)
