Ingredients

  • 100 gms butter
  • ½ cup sugar
  • 1 tablespoon golden syrup
  • 1 egg
  • 1 teaspoon baking soda
  • 2 tablesoons hot water
  • 1¾ cups flour
  • 2 tespoons baking powder
  • 1 cup feijoa pulp
  • 1 lemon juice and grated rind
  • 4 tablespoons demerara sugar

Method

In food processoror large bowl mix butter and sugar until creamy. Add golden syrup and egg.
Mix together baking soda and hot water and add to mix. Finally add flour and baking powder then feijoa pulp.
DO NOT OVERMIX.
Pour cake into greased tin, lined with bakking paper.
Bake at 160 degrees C for 45 minutes.
Mix together grated rind and juice of lemon with demerara sugar and pour over cake and pop cake back into oven for 15 minutes.
