Method

  • In a bowl beat the eggs and add the mushrooms ,pepperomi ,half the cheese ,and milk.
  • fry the pepper and onions slightly until softened.
  • Remove them from frying pan and mix in with the egg mixture.
  • Pour this mixture back into frying pan and cook on a low heat with the lid on until it is nearly set.
  • Remove lid
  • Sprinkle with remaining cheese ,and put under grill until cheese is bubbling and going brown.
  • Remove from heat and serve .

  • Tips

    • If you dont like pepperomi, ham can be used instead.It dosent really need any seasoning ,as there is enough in the cheese and pepperomi.

    Ingredients

    • 4 large eggs. beaten
    • 1 tbs milk
    • 50 grams sliced pepperomi
    • 50 grams Grated Cheddar Cheese
    • 3 Sliced Mushrooms
    • ½ finely chopped red pepper
    • 4 finely sliced spring onions
    •  med sized lidded frying pan
    • small amount cooking oil
