Chinese Garlic- Chilli Chicken & Cucumber

It may seem odd to use cucumber as a hot vegetable,but it really does work in this recipe.

Method

1 Place cucumber into a colander,sprinkle with salt
& set aside for 20 mins.Rinse with cold water then pat
dry.

2 Heat oil in a wok or large frying pan,until hot & slightly
smoking.Add chicken & stir fry for 1-2 mins until it begins
to turn white.

3 Add garlic,spring onion,chilli,light soy & Shaoxing rice
wine.Stir fry for 2-3 mins.

4 Add cucumber & continue to stir fry for another 2-3 mins.

5 Serve with plain rice or noodles.

Shaoxing Rice Wine Or Dry Sherry 1 Dessert Spn
Light Soy Sauce 1dessert Spn
Red Chilli Deseeded & Finely Chopped 1
Garlic Cloves. Finely Chopped 2-3
Spring Onions Finely Chopped 1 Tbspn
Salt
Boneless,skinless Chicken Thighs,cut Into 1' Cubes 500 Grm
Cucumber Peeled Deseeded & Cut Into 1' Pieces
Oil 1 Dessert Spn
