Method

  • Heat oven to 180 oC.

  • Put all sponge ingredients in processor and turn on.

  • Put in rectangle greased baking tin and bake in oven for about 35 minutes.

  • Beat the butter and icing sugar and vanilla essence together.

  • Once cooled cut in half horizontally and fill with jam and butter icing.

  • Add food colouring to rest of butter icing.

  • Ice the outside with the coloured butter icing and then roll out the fondant to make a square for the 'ipod screen'. Cut out a circle for the controls. Put on top of butter icing.

  • Roll out fondant icing to make the ear phones.

  • Write the controls and name of song playing with an edible writing pen.
  • Tips

    • My tip is to pipe the icing on and then smooth it down with a palette knife afterwards.

    • SPONGE CAKE
    • 3 eggs
    • 175g SR flour
    • 175g caster sugar
    • 175g marg
    • ½ tsp vanilla essence
    • BUTTER ICING
    • 700g Icing sugar
    • 350g butter. softened
    •  vanilla essence (optional)
    • few drops food colouring- any colour you want
    • OTHER THINGS
    •  White fondant icing
    •  strawberry jam
