Method

  • 1. Mix the spices, colouring, lemon juice,ginger and garlic into a paste with a little water and stir in well with the yoghurt to make a tandoori marinade. Marinate the chicken in the marinade for 2-60 hours.
  • 2. Preheat the oven to its highest heat for at least 20 minutes. Shake off excess marinade and place chicken pieces on skewers on a wire rack in the oven. If preferred, do not use skewers.
  • 3. Cook for 15-20 minutes and check the chicken is cooked by piercing the thickest poece with a skewer. If the juices run clear it is cooked. Serve with a lemon wedge.
  • Tips

    • This is also the basis for the great Chicken Tikka Masala. I will share that one with you next! Serve the Tikka with rice, salad, naan, mint yoghurt and lemon or lime wedges. Care with the quantity of chilli you use. Yummy!!!

    Ingredients

    • 1 pint natural yogurt
    • 1 tbsp cumin powder
    • 1 tbsp Garam masala powder
    • 1 tsp coriander powder
    • 1 tsp Turmeric powder
    • 1 tsp chilli powder (or to taste)
    • 1 lemon juice of
    • 8 Cloves garlic. crushed
    • 1 inch fresh ginger finely chopped
    •  red food colouring
    • 4 chicken breasts
    • 1 lemon
