Smoked Salmon Linguine

Method

  • 1. Cook the linguine according to the packet.
  • 2. Meanwhile, melt a little butter in a pan and cook the garlic until softened. Add the creme fraiches, lemon zest and parmesan. Cook for 1 minute and remove from the heat.
  • 3. Drain the pasta and toss with the sauce and smoked salmon. Divide between 2 bowls and garnish with the rocket.
  • Tips

    • You really only need to start cooking this 15 minutes before you want to eat. Be careful with the garlic, very easy to burn which gives it a horrible bitter taste.

    Ingredients

    • 200g Linguine preferably but spaghetti will do
    •  butter or oil for frying
    • 2 Cloves garlic. crushed
    • 200ml tub ½ fat creme fraiche
    • 1 lemon. zest of
    • 25g fresh parmesan. grated
    • 75g sliced smoked salmon. cut into strips
    •  Rocket leaves to serve
