1. Try roughly chopping 150g Taste the difference cracked black pepper colossal cashews and spread out on a baking tray lined with non-stick baking paper.
2. Place 200g Fairtrade white caster sugar in a frying pan over a medium heat and heat gently until the sugar begins to caramelise. Resist the temptation to stir the sugar, but gently swirl the pan so the sugar is evenly spread.
3. Once it has melted and turned a caramel colour, pour it evenly over the cashew nuts and leave to set. Snap the brittle into pieces and serve with coffee for a simple sweet treat
