Method

  • 1. Try roughly chopping 150g Taste the difference cracked black pepper colossal cashews and spread out on a baking tray lined with non-stick baking paper.

  • 2. Place 200g Fairtrade white caster sugar in a frying pan over a medium heat and heat gently until the sugar begins to caramelise. Resist the temptation to stir the sugar, but gently swirl the pan so the sugar is evenly spread.

  • 3. Once it has melted and turned a caramel colour, pour it evenly over the cashew nuts and leave to set. Snap the brittle into pieces and serve with coffee for a simple sweet treat
