Method

  • 1. Try melting some unsalted butter and use to brush the sides of 4 ramekins.

  • 2. Divide 1 pack of Taste the difference Isle of Skye responsibly sourced oak smoked salmon between the ramekins, draping over the bottom and sides.

  • 3. Crack 2 eggs into each ramekin, sprinkle with freshly chopped parsley and season with freshly ground black pepper.

  • 4. Bake for 20–25 minutes in a preheated oven at 180°C, fan 160°C, gas 4 until the yolks are cooked. Serve with steamed asparagus for a special
