Passionfruit Party Cheesecake
Method
1. Try crushing 12 ginger snaps and mix with 30g melted unsalted butter, then pat the mixture into 6 small bowls or ramekins.
2. Mix together 70ml British half fat crème fraîche, 200g soft cheese, 40g Fairtrade caster sugar and the juice and zest of two lemons.
3. Spoon the mixture onto the biscuit base and chill in the fridge overnight.
4. Garnish with passionfruit and serve for a refreshingly fruity Christmas dessert.
