Begin by add 1.5 1b of beef stewing meat into a saucepan. Add 500 mls of boiling water, red wine and stock. season as required. Dice up the red onion into small pieces and add to the meat. Cook on a simmering heat for around 2 hours checking to make sure meat is covered with sauce so that the meat stays soft. If it needs an extra half an hour after the 2 hours to make sure it is tender then continue cooking. Add the onion marmalade and stir.
While the meat is cooking, peel the potatoes and chop each one in half. Cook for 25 minutes until soft. Check with a folk to see if the potatoe is soft. Mash the potato with a masher to get rid of the lumps. Add 1 oz butter, 2 tbs cream and 2 tbs of parmesan cheese. Stir into mashed potato.
Dice mushrooms and add to the stew. Cook in the oven in a casserole dish with frozen dumplings on top. After 15 minutes turn dumplings over and cook for further 15 minutes at 200 degrees.
Serve beef stew with mashed potato and dumplings.
