Beef Stew with Dumplings For Winter Blues

Method

  • Begin by add 1.5 1b of beef stewing meat into a saucepan. Add 500 mls of boiling water, red wine and stock. season as required. Dice up the red onion into small pieces and add to the meat. Cook on a simmering heat for around 2 hours checking to make sure meat is covered with sauce so that the meat stays soft. If it needs an extra half an hour after the 2 hours to make sure it is tender then continue cooking. Add the onion marmalade and stir.

  • While the meat is cooking, peel the potatoes and chop each one in half. Cook for 25 minutes until soft. Check with a folk to see if the potatoe is soft. Mash the potato with a masher to get rid of the lumps. Add 1 oz butter, 2 tbs cream and 2 tbs of parmesan cheese. Stir into mashed potato.
  • Dice mushrooms and add to the stew. Cook in the oven in a casserole dish with frozen dumplings on top. After 15 minutes turn dumplings over and cook for further 15 minutes at 200 degrees.

  • Serve beef stew with mashed potato and dumplings.

  • A Log fire and some friends to share it with would warm the heart this winter.
  • Ingredients

    • GOOD QUALITY BRAISING STEAK CUT INTO CHUNKS
    • 150 mls red wine
    • 200 mls Beef stock
    • 6 oz chestnut mushrooms
    • 1 large red onion diced
    • ½ a jar of onion marmalade
    • packet of Aunty Bessie's Dumplings
    • 1 x bag of potatoes for mashing (peeled but uncooked weight)
    • 2 tbsp cream
    • 2 tbsp grated Parmesan cheese
    • pinch of Salt and pepper
    • 1 oz of butter
