Method

  • Pudding:

  • 1. Heat the milk and margarine together and separate the egg. Beat the egg yolk. When the marg has melted add in the sugar and stir until dissolved.
  • 2. Cool the milk slightly and add it to the beaten yolk to make a custard. Add the breadcrumbs and leave it aside to soak.
  • 3. Put the jam to heat so that it is easier to spread. Put mixture in a greased pie dish (Pyrex dish).
  • 4. Bake in a moderate oven (180 degrees) for 30 minutes. When baked spread the jam on top.

  • Meringue:

  • 1. Beat the egg white until stiff. Fold in the castor sugar and spread on top of the pudding.

  • Return pudding to the oven and allow to cook until meringue browns on top.
  • Ingredients

    • 1 ½ oz Breadcrumbs
    • ½ pint milk
    • ½ oz margarine or butter
    • ½ oz sugar
    • 1 tablespoon Raspberry Jam
    • 1 egg yolk
    • 1 egg white
    • 2 oz castor sugar
