Butterfly Griddled Spicy Low Fat Chicken

Method

  • Place yogurt in a tea towel and give a gentle squeeze to get out some of the water. This water is replaced with the lime juice a moment later when you combine all the other ingredients apart from the chicken.

  • Butterfly the chicken (slice through the centre and spread out - http://www.youtube.com/watch?v shows you how)and put in a clean plastic bag or tupperware to get the flavours.

  • Heat a griddle as hot as possible and cook the chicken, it doesn't take long, few mins each side.
  • Tips

    • One of those George Forman grills works really well for this.

    Ingredients

    • CHICKEN
    • 2 chicken breasts
    • MARINADE
    • Small Tub full fat plain yoghurt
    • ½ lime - zest and juice
    • 1 tsp Mr Naga (minced chilli chutney)
    • Small Bunch chopped coriander
    • ½ tsp cumin - ground
    • To Taste salt and pepper
    • Small Pinch saffron (optional)
    • 2 cloves garlic. peeled and finely chopped

    I made this recipe when I'd planned to make someone a really nice curry and had spent so much time buying the ingredients and putting on my make-up that I didn't have time to cook!
