Method

  • 1. For the cookies mix the cream sugar and butter together and add dry ingredients.

  • 2.Press into swiss roll tin and bake for 25 minutes at 170 degrees. Allow to cool.

  • 3. For the filling mix the cream the icing sugar and butter together. Add peppermint essence and green colouring. Spread over the cookie base.

  • 4. Melt the chocolate and spread over the top.

  • 5. Allow to cool and cut into biscuit size squares.
  • Tips

    • One or max two is enough, although they are gorgeous they are heavy.

    • I was going to say the same. I have not ever put cream in cookies!Cream butter and sugar makes much more sense!!

    • At a guess i would say it meant - cream sugar and butter together, and later cream butter and icing sugar together - not that there is cream as well.

    • 8 oz icing sugar

    • 5 drops peppermint essence
    • 3 drops green food colouring
    • TOPPING
    • 10 oz cooking chocolate

    I think my Mum is the only person ever to have made these, I've never seen them anywhere else. They are a mint choc delight!
