Method

  • 1. Drain sun-dried tomatoes, reserving 100ml of the oil. Heat the oil in a large saucepan, add the onions, carrots, garlic and coriander stalks. Cook slowly for 10 mins until soft, then add the spices and meat.

  • 2. In a food processor, whiz one of the tins of tomatoes with the sun-dried tomatoes. Add this and the remaining tins of tomatoes to the pan. Season well with salt and pepper, then bring to the boil and simmer the chilli over a medium heat for 1 hour. Add the peppers and beans, bring back to the boil and simmer for 1 hour more.

  • 3. Fold in chopped coriander leaves and season. Serve with rice.

    • 250g sun-dried tomatoes in oil
    • 2 large red onions. finely chopped
    • 2 carrots. chopped
    • 5 cloves of garlic. crushed
    • large bunch coriander. stalks finely chopped
    • 2 tbsp chilli powder
    • 1 tbsp smoked paprika
    • 1 tbsp ground cumin
    • 500g minced beef
    • 500g minced pork
    • 4 x 400g tins chopped tomatoes
    •  salt and pepper
    • 3 x 400g tins of kidney beans. drained
    • 3 red peppers. chopped
