1. Drain sun-dried tomatoes, reserving 100ml of the oil. Heat the oil in a large saucepan, add the onions, carrots, garlic and coriander stalks. Cook slowly for 10 mins until soft, then add the spices and meat.
2. In a food processor, whiz one of the tins of tomatoes with the sun-dried tomatoes. Add this and the remaining tins of tomatoes to the pan. Season well with salt and pepper, then bring to the boil and simmer the chilli over a medium heat for 1 hour. Add the peppers and beans, bring back to the boil and simmer for 1 hour more.
3. Fold in chopped coriander leaves and season. Serve with rice.
