Method

  • 1. Try making up a Be good to yourself Victoria sponge mix by placing the mix a bowl and adding 1 egg and 4 tbsp. water.

  • 2. Beat for 1 minute, then add another 4 tbsp. water and beat for a futher minute.

  • 3. Spoon the mixture into fairy cake cases, and a dollop of strawberry jam on the top of each cake.

  • 4. Bake in a preheated oven at 200C, fan 180C, gas 6 for approximately 15 minutes until well risen and golden brown.

  • 5. Once baked, dust the cake with icing sugar and serve as a sweet treat for kids.

    • 1 jar Strawberry jam
    • 1 Egg
    • 2 tbsp. Icing sugar
