Heat the water in a saucepan and stir in the sugar till dissolved. Remove from the heat and add the lemon juice and the chopped mint leaves. Let the mixture cool and add the rind slowly whilst stirring the mixture.
Cool in a shallow container in the freezer. When just about frozen place in a blender or food processor until the ice is finely crushed.
Just before serving add either the ice cream or yohurt. Decorate with fruit, mint leaves and serve.
Tips
The sorbet can be kept in the freezer until needed but it will need to be re-crushed.
