In a saucepan combine all the ingredients apart from the orange segments. Heat the mixture slowly over a medium heat till boiling, stirring occasionally.
Remove the mixture from the heat and allow to cool.
Puree the mixture in food processor or blender until smooth. Pour the mixture into a shallow metal pan, cover with Clingfilm and put into the freezer until firm. Break up into chunks and process again until smooth and puffy.
Replace in the freezer until ready to serve.
Pour into serving dishes and add the orange segments and grapes on cocktail sticks. Add a sprig of mint to decorate and serve.
