Fruit Boats On Strawberry & Rhubarb Ice

Method

  • In a saucepan combine all the ingredients apart from the orange segments. Heat the mixture slowly over a medium heat till boiling, stirring occasionally.

  • Remove the mixture from the heat and allow to cool.

  • Puree the mixture in food processor or blender until smooth. Pour the mixture into a shallow metal pan, cover with Clingfilm and put into the freezer until firm. Break up into chunks and process again until smooth and puffy.

  • Replace in the freezer until ready to serve.

  • Pour into serving dishes and add the orange segments and grapes on cocktail sticks. Add a sprig of mint to decorate and serve.

    • 2 cups chopped rhubarb
    • 2 cups Strawberries hulled and sliced
    • 1/3 cup Grand Marnier
    • ½ cup sugar (or less to taste)
    • 1 large orange segmented
    •  grapes and mint to decorate
