To be made in 2 HEART shaped tins (8" sandwich tins).
1. Grease and flour the tins. Pre-heat the oven to 200 degs C.
2. Separate the eggs. Whisk the whites until stiff. Add the sugar and whisk again. Then whisk in egg yolks. Sieve the remaining dry ingredients and fold in carefully.
3. Divide the mixture between the two heart shaped tins and bake in the pre-heated oven for 20-25 minutes or until the centre top springs back into place when pressed gently with a finger. Cool on a rack.
4. Spread the underside of the hearts with strawberry jam and fill the sandwich with the whipped cream. Dust the top with icing sugar.
