Valentine's Day Feather Sponge

Method

  • To be made in 2 HEART shaped tins (8" sandwich tins).

  • 1. Grease and flour the tins. Pre-heat the oven to 200 degs C.
  • 2. Separate the eggs. Whisk the whites until stiff. Add the sugar and whisk again. Then whisk in egg yolks. Sieve the remaining dry ingredients and fold in carefully.
  • 3. Divide the mixture between the two heart shaped tins and bake in the pre-heated oven for 20-25 minutes or until the centre top springs back into place when pressed gently with a finger. Cool on a rack.
  • 4. Spread the underside of the hearts with strawberry jam and fill the sandwich with the whipped cream. Dust the top with icing sugar.

    • 2 oz plain flour
    • 2 oz cornflour
    • 1 level teaspoon baking powder
    • pinch of salt
    • 4 eggs
    • 4 oz castor sugar
    • FILLING
    •  strawberry jam
    • ΒΌ pint cream whipped
    • TOPPING
    •  icing sugar for dusting
