Method
1) Grease two 8inch sandwich tins and sprinkle with flour
2) Beat the eggs
3) Sieve the flour and the salt into a bowl.
4) Cream the butter and sugar into another bowl until soft and white
5) Add the eggs to the butter mixture and mix well
6) Fold in the flour mixture
7) Divide the mixture into the two tins
8) Cook on a moderate heat for 15-20 minutes.
9) Once baked leave to cool
Butter Icing
10) Cream the butter in a bowl
11) Add the Icing sugar a bit at a time
12) Add the essence and mix well
Once the cake has cooled, spread the butter icing on one half of the sandwich and place the other half on top. Sprinkle with icing sugar to finish.

- 4oz Caster sugar
- 2 Eggs
- 4oz Flour
- ΒΌ tsp Salt
- 2oz Butter
- 2oz Icing sugar
- 3 drops Vanilla essence
