Method

  • 1) Grease two 8inch sandwich tins and sprinkle with flour
  • 2) Beat the eggs
  • 3) Sieve the flour and the salt into a bowl.
  • 4) Cream the butter and sugar into another bowl until soft and white
  • 5) Add the eggs to the butter mixture and mix well
  • 6) Fold in the flour mixture
  • 7) Divide the mixture into the two tins
  • 8) Cook on a moderate heat for 15-20 minutes.
  • 9) Once baked leave to cool

  • Butter Icing
  • 10) Cream the butter in a bowl
  • 11) Add the Icing sugar a bit at a time
  • 12) Add the essence and mix well

  • Once the cake has cooled, spread the butter icing on one half of the sandwich and place the other half on top. Sprinkle with icing sugar to finish.

    • 4oz Margarine
    • 4oz Caster sugar
    • 2 Eggs
    • 4oz Flour
    • ΒΌ tsp Salt
    • 2oz Butter
    • 2oz Icing sugar
    • 3 drops Vanilla essence
